  • FOOD

Larry Davidson, Special To The Times|Aug 16, 2012

Because we've discussed pork here, one of my favorite pairings for everything except the hams and BBQ'd pork dishes is pi- not noir. This beautiful and aromatic red wine pairs well with the subtle flavors and textures of pork tenderloins, chops and shoulder roasts - the predominant cuts of the pig. First a short history of the queen of grapes: Pinot Noir has been grown in France - its homeland - for ap- proximately 2,000 years beginning prior to the Roman invasion of the Gaul's fiefdoms. The careful record-keeping of the monks who man- aged...

Larry Davidson, Special To The Times|Aug 16, 2012

Welcome to my food column where anything goes. Here we'll explore the history of how we arrived where we are today through food and the ingredients that we commonly use and take for granted all the time. To understand where your food came from is akin to knowing where we came from and the common bond that the family farm and table provides. This installment explores the noble pig -- though it just scratches the surface. I sat down the other day with Eric Seo- ane of the Weinhard Café in Dayton, one of the best young chefs in the region, to...

  • Coach’s Corner

    Jeff Bartlow, Guest Column|Aug 16, 2012

WAITSBURG -- The 2012 schedule is arguably the hardest schedule we have had in recent years. Our senior football players total 15 guys, maybe more, and we will need all of those seniors if we expect to make another run deep into the playoffs. We have 15 seniors for sure and depending on Jubilee Youth Ranch's participation, we could have up to 17 or 18 seniors. This has to be one of the largest senior classes we have ever had at Waitsburg. Oddly enough, with the number of players that we have lost over the last two years, only four of those... Full story

  • Who Let The Hogs Out?

    Morgan Smith, The Times|Aug 16, 2012

WAITSBURG - Raising swine for the fair can be a good investment financially and for the experience. But for Waitsburg FFA member Luke Alexenko, raising pigs is more than just money -- it's fun. It's a big investment in the beginning, $120 to purchase the three-month-old pig, $5 for a rented sty and $300 for high protein feed - per pig. And to get any kind of substantial return, the pigs have to be sold at the fair, which means they have to meet several requirements. The most notable of these is... Full story

  • Board Approves New Sound System

    Jillian Beaudry, The Times|Aug 16, 2012

WAITSBURG - The Waitsburg football field gets all new lighting and press box and a new sound system is on the way as well. School Board Chairman Ross Hamann said at the school board meeting last Wednesday that last foot- ball season the 50-year-old sound system was no longer usable because of the poor quality. Colter Mohney, the district's facilities/transporta- tion/maintenance supervisor, said the drivers on the old speakers are bad and the only thing the horn-shaped speakers are good for is yellow jacket nests.
