Chicken Enchiladas

I mentioned I would share the chicken enchiladas recipe this week, though I confess I did not make it. It came from All Recipes, with a 4.5 star and commented that it was an easy and quick dinner.

I received the nicest phone call from a lady who told me she really likes the Frittata recipe, and shared that she added Italian seasoning (a tablespoon if I remember correctly). What a great feedback. I don't think I would have thought to add that seasoning, but next time I will.

Also, for those who have stopped me and told me they have enjoyed reading the recipes, even if they do not make them all, I warmly thank you. I am a reader of many recipes to make a few chosen ones. I also have made some, only not to repeat it.

INGREDIENTS:

4 skinless, boneless chicken breast halves 1-15 oz. can tomato sauce

1 onion, chopped ½ c. water

½ pint sour cream 1 Tbsp. chili powder

1 c. shredded Cheddar cheese 1/3 c. chopped green bell pepper

1 Tbsp. dried parsley 1 glove garlic

½ tsp dried oregano 8- 10 inch flour tortillas

½ tsp black pepper 1-12 ounce jar taco sauce

½ tsp salt ¾ c. shredded Cheddar cheese

DIRECTIONS:

Preheat oven to 350 degrees

In a medium, non-stick skillet over medium heat, cook chicken until no longer pink and juices run clear. Drain excess fat. Cube the chicken and return it to the skillet. Add the onion, sour cream, Cheddar cheese, parsley, oregano, and ground black pepper. Heat until cheese melts. Stir in salt, tomato sauce, water, chili powder, green pepper, and garlic.

Roll even amounts of the mixture in the tortillas. Arrange in a 9 x 13 inch baking dish. Cover with taco sauce and ¾ c. Cheddar cheese. Bake uncovered in the oven for 20 minutes. Cool 10 minutes before serving.

MY NOTES:

I would substitute red or yellow peppers as they have a milder flavor. Like most of us, we are always looking for something to make for dinner. I will try this soon.
