Banana Poppy-Seed Pancakes

First, before I start on this recipe, let me share a story, well, not sure it's a story, more like a "really?" Those yummy cookies I made last week, that by themselves were very good, but "J" and "K" thought they were better by dunking them into another flavor. "J" dunked them into Hershey's chocolate syrup and "K" dunked them coffee. Great cookies they both said. I ask,-isn't it a bit like telling someone "great dinner" while piling catsup on everything? I am smiling;) and I can be bribed to tell you who "J" and 'K" are!

I love pancakes, mostly with peanut butter and jam or syrup. I saw this recipe and had two really ripe bananas that needed to be used or tossed. I had poppy seeds and blueberries and all the other ingredients. I had two men to feed Sunday morning, so for me it was the perfect recipe to try.

INGREDIENTS:

1 c. whole wheat flour 2 c. milk

1 c. all-purpose flour 2 ripe bananas, mashed

4 tsp baking powder ¼ c. coconut oil, melted

2 tsp poppy seeds 2 Tbsps. honey

1 tsp salt 1 tsp vanilla extract

2 eggs ½ c. fresh blueberries (optional)

DIRECTIONS;

Whisk whole wheat flour, all-purpose flour, baking powder, poppy seeds, and salt together in a bowl.

Beat eggs in a large bowl. Add milk, bananas, coconut oil, honey, and vanilla extract; whisk together. Pour in flour mixture and stir until just combined.

Preheat a lightly oiled griddle on medium-low heat. Ladle batter ¼ cup at a time onto the prepared griddle, sprinkling a few blueberries over each pancake. Cook until bubbles start to appear and edges are dry, about 3 minutes. Flip and cook until other side is browned, about two minutes.

MY NOTES:

Those of us who have made pancakes forever won't use the minutes suggested. They seem a bit long, however, I didn't check. I use the rule of the bubbles coming to the top the flip them in a bit. I use oil (just enough to cover the top) on the griddle because it makes them browner and a little crisper on the outside. Joe uses the spray oil. Personal choice, but my choice is oil if I am making them.

I have mentioned before that poppy seeds are much cheaper if bought at Andy's in one of their containers, but the last time I had to ask for them, as they keep them in the back. You know, poppy seeds may be used to make drugs.

I shortened the steps a bit by mixing the dry ingredients the night before. And my bananas were already mush so I didn't have to mash them.

It makes quite a few pancakes, but I didn't have many left. And it is handy to heat them up for breakfast the next day.
