I had to smile as I was digging through my drawer to find this recipe. I had remembered exactly the paper it was written on, but had to go through them one by one, and of course it was the second to the last one. Now when I post a recipe, it goes into my recipe folder on the computer and I can easily do a search to find one. But this hand-written recipe dates back some 25 years.

I have made this many times, but not recently. It is delicious – basically strawberries and cream cheese on a shortbread cookie.

INGREDIENTS:

½ c. butter

½ c. sugar

1 c. flour

Melt butter, add sugar and flour, press into a pizza pan.

Bake at 325 degrees for 15 minutes or until slightly brown.

1 ea 8 oz cream cheese

½ c. sugar

Cream together and spread on cooled crust.

½ pkg strawberry Danish Dessert or 1 pkg strawberry glaze.

Mix according to directions

1 pt. sliced or crushed strawberries. Mix into Glaze, spread on top.

MY NOTES: As I am typing, I don't know if one can find the Strawberry Glaze anymore.

I googled Strawberry Pizza to get a photo, then decided to use the picture that you see. In my search I saw a recipe that makes their own glaze with crushed strawberries, sugar, and cornstarch. I saw another recipe that used a cookie mix for the dough. I would add blueberries also.

Pizza pans used to be rather small and round, so if you have one that will work for the crust, great. It's not a lot of crust and you have to work it thin and to the edges of the pan. Or I would suggest a small cookie pan with edges

I'm glad there are so many different kinds of fresh fruit at this time of year. Do you have a favorite fruit recipe you'd like to share?
