Cashew Chicken Salad Sandwiches

I found this recipe in the Costco Connection and I liked that it used apple and cucumber. Remember the chicken poppy seed salad? It seems several chicken recipes have nuts and fruit. That one had pecans and grapes.

I didn't make this one yet but will later. For me, this will be used as a salad.

A few notes on cashews: Cashews are packed with antioxidants, vitamins E. K. and B6, and minerals such as copper, phosphorus, zinc, magnesium and iron. Many of these can be hard to find in other foods.

Since this recipe came from the Costco magazine, it mentions the Kirkland brand is listed for several items, which I will drop.

INGREDIENTS:

2 c. diced cooked chicken

½ c, chopped cashews

½ c. chopped red apple

½ c. chopped peeled cucumber

½ c. mayonnaise

½ tsp sugar

½ tsp salt

Dash of pepper

6 lettuce leaves

6 Kaiser rolls or croissants, split.

DIRECTIONS:

In a large bowl, combine mayonnaise, sugar, salt and pepper. Add to chicken mixture and toss to coat. Place a lettuce leaf and ½ cup chicken salad on each roll or croissant. Makes six servings.

MY NOTES:

Sounds easy enough and a good combination. On the chicken poppy seed salad recipe, its dressing was a combination of lemon yogurt and mayonnaise, so I could see that being used for this, or any flavor of yogurt. One could substitute the cashews, though I think the cashews would give it a rich flavor.
