I thought and I thought and I thought in vain, at least I thought I'd write my name. It was one of the quotes from my 6th grade autograph book. That's how I felt trying to decide which recipe to put in. This one was in the category in the Allrecipes.com section called Quarantine Recipes. The idea is to be able to use what you have in the freezer or pantry. Isn't that what we do anyway? They also had included about 15 recipes because they took quite a bit of time, but they were all breads and pastries. I can easily lose myself to baking for a few hours, which gives me the excuse not to dust.

First, a review on the bread pudding: It turned out great and just like the picture, EXCEPT, I didn't toast the bread. No excuse. So what I had was custard soaked bread, not bread with custard around it, making the bread pudding almost too soft. One can easily reduce the sugar to 1 cup because the raisins make it plenty sweet. I put in blueberries, but they were lost to the raisins, so a bit of a waste of my blueberries (in my opinion). The sauce turned out perfect and perhaps a good one to save for gingerbread. We have been eating it for breakfast with fruit.

If you have found a good recipe, please share. Unfortunately for you, I usually pass on the ones calling for sour cream or cream cheese!!

INGREDIENTS:

3 Tbsp butter

1 c. chopped onion

1 clove garlic, minced

1 pound ground beef

2 tomatoes, chopped

1 c. frozen peas

1 Tbsp Masala curry powder

1 ½ tsp salt

1 tsp paprika

½ tsp chili powder

1 dash ground pepper

¼ c. flaked coconut or to taste.

DIRECTIONS:

Melt butter in a skillet over medium heat, stir in onion and garlic, cook until onion is translucent, 3 to 5 minutes.

Stir beef into onion mixture, cook until crumbly and no longer pink, 5 to 10 minutes. Drain excess fat from beef mixture.

Stir tomatoes, peas, curry powder, salt, paprika, chili powder, and black pepper into beef mixture, cook until thickened, about 20 minutes. Garnish with coconut.

Serve over a bed of rice (or noodles)

MY NOTES:

This seems quick and easy. We have curry powder, but not that particular one. My son gifted me with bison meat so I may try it in this-or not.
