Try to find a really well-made Washington Cabernet that doesn't cost an arm and a leg. Not easy, especially one that includes fruit from top vineyards in Walla Walla and on Red Mountain. I've found one, and surprisingly, it's from an Oregon winery best known for Pinot Gris and Pinot Noir. Almost half of the grapes in the blend are from Walla Walla's Seven Hills and Red Mountain's Quintessence vineyard. It's a classic Bordeaux blend – three quarters Cab and the rest shared between Merlot and Cabernet Franc. Washington's most admired red wines are Cabernets, and this is a well-balanced expression of the style. Cassis, black cherry, mocha, and sandalwood flavors combine in this medium-bodied and flavorful wine.
